Pachidi is normally made during festivals and weddings. The veritable medley of taste is a delight to each bite. It is served with Nasi Minyak and sambal or on its own.

2 cucumbers;peeled and sliced
1/2 ripe pineapple;peeled,cored and chopped
3 large onions;sliced
2 fresh red chillies;remove some seeds and chopped
1/2 cup vinegar
2 tablespoon sugar
1 cup(8oz) lime or lemon juice
1 tablespoon fish sauce(optional)
1/2 cup dried shrimp; dry roasted and coarse ground


Note : Use plastic or glass bowl


Method of preparation:

Cut cucumber into thin slices. Place in a bowl with chopped pineapple, onion and chillies. Set aside. In a separate bowl combine vinegar, sugar, lime juice, fish sauce and salt. Mix well. Pour the content into the first bowl (containing pineapple, onion and chillies). Mix. Sprinkle ground shrimp. Serve.
