Ikan masam manis is fried fish in a platter smothered in sweet and sour sauce; with the right balance. It is served with white rice.

Ingredients:

600gm fish.(whitefish,red snapper or trout);cleaned and scored on both sides
2 tablespoon cornflour
2 cloves garlic;minced
2 medium onions;sliced
200gm ripe pineapple;cut into matchstick sizes
2 fresh red chillies;sliced
2 kaffir lime leaves;chopped
2 teaspoon cornflour          )
200ml water                     ) mix
1/2 a cucumber;cut into matchstick sizes
2 sprigs coriander leaves;chopped
85ml tomato sauce          )
2 tablespoon plum sauce  )
1 tablespoon chilli sauce   ) mix in a bowl
1 tablespoon vinegar       )
2 teaspoon sugar            )
sufficient oil to fry fish

 

Method of preparation:

Clean fish. Score on both sides.Coat fish with cornflour. In a wok heat some oil. Fry the fish till it is crispy and brown on each side. Place fried fish in a platter. Set aside. Drain frying oil from the wok .(Save 2 tablespoon oil). Heat the oil. Add minced garlic and saute till it is brown. Then, add onion, pineapple, chillies and lime leaves. Fry till onion is golden brown. In a large bowl add tomato sauce, plum sauce, chilli sauce, vinegar and sugar. Mix well. Pour contents of the bowl into the wok. Add the cornflour and water mixture and cut cucumber. Stir well. Increase heat and bring to a boil. Turn down flame. Simmer till the sauce is thick. Scoop sauce and pour evenly onto the fried fish. Garnish with chopped coriander leaves. Serve hot with white rice.
