Kuih rempeyek is peanut fritter; crunchy, slightly spicy anytime snack. Ingredients: 300gm peanuts kernels;washed and cleaned
Method of preparation: A flat pan and a wok is required to make kuih rempeyek. Heat sufficient oil in a wok to deep fry. In a separate range heat some oil in a flat pan. Scoop some batter in a semispherical ladle. Add 8 or 10 peanut kernels into the ladle. Pour the batter into a thin circular shape about 8cm in diameter. Make sure the peanuts are spread out. Fry for 2 to 3 minutes. Use a slotted spoon and transfer the kuih rempeyek to the wok for deep frying. Remove when the fritter is golden brown. Cool on absorbent paper.Store in an airtight container.
