Kuih lapis kachang merah is a luscious cake; soft and creamy. Serve with coffee or tea.

Ingredients: (bottom layer)

100gm red beans;boiled tender and coarse ground
100gm rice flour
20gm corn flour
400ml coconut milk;no additives
80gm sugar
a little butter;to grease pan

 

Method of preparation: (bottom layer)

In a bowl, combine all the ingredients. Mix well. Pour the mixture into a greased pan and steam till cooked. Set aside.

 

Ingredients: (top layer)

150gm palm sugar; crumbled
30gm granulated sugar
150ml water
2 eggs
200ml coconut cream;no additives
40gm rice flour
40gm wheat flour
1/4 teaspoon salt

 

Method of preparation: (top layer)

In a pot pour 150ml water. Add palm sugar and granulated sugar. Heat till the sugars are dissolved. Set pot aside to cool a bit. In a large bowl, combine the rest of the ingredients. Mix well. Pour in the sugars solution slowly. Mix well. Next carefully pour the mixed solution on top of the steamed bottom layer. Steam again till the top layer is done.(about 30 minutes). Set the kuih lapis aside to cool. Slice diagonally. Serve with coffee or tea.
