Putu beras is made of ground dry roasted glutinous rice. The cookie is slightly sweet and crunchy. Serve with coffee or tea.

Ingredients:

420gm glutinous rice; washed, drained and dried
400gm sugar;finely ground
250ml water

 

Method of preparation:

Dry roast the glutinous rice over low heat. Set aside to cool. Grind the rice into fine powder. In a pot pour water and add the ground sugar. Heat till the sugar is dissolved. Simmer. Turn off heat and let it cool a bit. Sprinkle a little of the sugar solution at a time on the ground rice. Mix well. Make sure the mixture is still powdery. Hand pack the mixture into a wooden mold. Press to compact. Invert the mold and tap. The putu beras will drop out. Dry in the sun till it hardens. Store in an airtight container. Serve with coffee or tea.
