Kuih bangkit garing is slightly sweet; crunchy and crumbly. Serve with coffee or tea. Ingredients: 300gm tapioca flour;dry roast
Method of preparation: In a wok dry roast tapioca flour and wheat flour separately. Set aside to cool. In a large bowl beat eggs and ground sugar till fluffy. In a separate bowl mix the dry roasted wheat and tapioca flours. Add the flour mixture into the bowl containing the beaten eggs and sugar; a little at a time.Knead to make a soft dough. Dust a board with a little flour. Using a rolling pin, roll the dough into 5mm thickness. Dip the cookie cutter into flour. Then, cut out stampings. Arrange cookies in a greased pan.Bake at 190 degrees C till the cookies are cooked. (about 15 to 20 minutes). Cool. Store in an airtight container. Serve with coffee or tea. |
