Pacheri(paceri) tomato is a sweet,sour and tangy dip.Its spices content
give it a tantalizing taste.Serve with chips,white rice,thosai or nasi minyak
with curry.

250gm tomato;cut into 4's .Using a skewer roast each piece
in the open flame(momentarily)
2 tablespoon oil
1 tablespoon shredded young ginger
1 large onion,sliced
5 cardamom
1 cinnamon stick;3cm long
4 cloves(a spice)
3 cloves garlic;chopped
a little water                      )
2 teaspoon chilli powder      ) mix together into a paste
1 teaspoon tumeric powder )
1 tablespoon vinegar
2 tablespoon sugar
1/2 teaspoon salt
1 tablespoon raisins
2 fresh green chillies; cut into half lengthwise
2 fresh red chillies;      "     "     "       "

Method of preparation.
Heat oil in a wok. Saute sliced onion till it is golden brown. Add chilli and tumeric paste. Stir well. Then add cardamom,cinnamon stick,cloves and garlic.Cook till the smell is aromatic. Next, add vinegar, sugar, salt and roasted tomato. Add sufficient water.Mix and stir well till the sugar dissolves. Heat the sauce till it boils.Turn down heat. Simmer till the sauce thickens. Add the cut chillies and raisins. Stir. Turn off flame. Serve with chips, thosai, white rice or nasi minyak with curry.
