Kuih Bengkang Ubi is slightly sweet, chewy and easy to make delicious cake. It is served with coffee or tea.

5 cups grated tapioca
11/2 cup sugar
1 teaspoon salt
4 cups(32oz) coconut milk;no preservatives
1/2 stick butter


Method of Preparation:

Grease a large baking tray with some butter. In a bowl mix all the ingredients well. Pour into the baking tray and spread evenly. Melt some butter. Brush on dough surface. Bake in an oven on moderate heat for about 2 hours(or till the surface becomes brown). Remove from oven and let it cool. Slice and serve with coffee or tea.
