Achar sayur is a mixed vegetable and nuts pickle made for weddings and festivals. It tastes a little spicy, sweet and sour; supplements curry or sambal served with nasi minyak.

400gm peanuts,dry roast,remove skin and coarse grind
200gm sesame seeds;dry roast
50gm dry red chillies;tear and soak in hot water for 20 min.drain. ) grind
100gm tumeric  root                                                             )     
250gm long beans/french beans;cut at 3cm length
250gm cucumber;cut into 3cm sticks
250gm carrots;cut into 3cm sticks
250gm red cabbage;shredded
2 large onions;sliced
2 tablespoon sour plum sauce
250gm sugar


Method of preparation:

Dry roast peanuts in a wok. Remove skins and coarse grind. Set aside. In a large pot boil water. Add long beans, cucumber, carrot, cabbage and onion. Blanch and drain. Into the pot add dry roasted peanuts, ground tumeric and chillies, dry roasted sesame seeds, plum sauce and sugar. Mix well. Chill for 30min. Serve with; curry or sambal and nasi minyak.
