Kuih seri muka kelapa is a delicious layered pastry. The bottom layer is made of steamed glutinous rice. The top layer is made of coconut custard. Kuih seri muka is served with coffee or tea. Ingredients; (bottom layer) 420gm glutinous rice
Method of preparation; (bottom layer) In a pot pour sufficient water and add glutinous rice. Soak overnight. Drain. Scoop the rice into a steaming pan. Set aside. In a bowl mix 400ml coconut cream and salt. Stir. Pour the mixture on top of the glutinous rice. Level.Steam the rice till it is almost cooked. Set aside.
Ingredients; (top layer) 2 eggs
Method of preparation; (top layer) In a large bowl mix eggs and sugar. Beat till sugar is dissolved. Add filtered pandan leaves solution, wheat flour, corn flour, coconut cream, food coloring and salt. Stir and mix well. Pour the mixed liquid on top of the steamed glutinous rice. Then, steam again till the top layer is cooked (about 30 minutes). Let the kuih seri muka kelapa cool down. Then cut diagonally. Serve with coffee or tea. |
