This is a delicious fried fish on a platter dish; smothered in spiced, tangy lime gravy sauce. Serve with; white rice or nasi minyak.

Ingredients:

1kg fish (red snapper, trout, mackerel);
whole fish cleaned.
salt for seasoning
sufficient oil to deep fry
8 shallots;sliced
3 cloves garlic;chopped
2 tomatoes;peeled and chopped
1/2 teaspoon lime peel;grated
2 tablespoon palm sugar
3 tablespoon lime juice
3 tablespoon sweet soy sauce
salt to taste
1 cucumber ;sliced
5 fresh red chillies;sliced         )
3 tablespoon chilli paste         )
2 stalks lemongrass;chopped   ) grind into paste
1 cm ginger;sliced                 )
2cm galangal;sliced                )

 

Method of preparation:

Rub salt on both sides of the fish. Set aside for 30 minutes. In a wok heat sufficient oil on high flame. Deep fry fish. Remove with a slotted spoon and place fish on a platter. Drain oil from the wok; but save 4 tablespoons. Stir fry the shallot till it is golden brown. Mix in the ground paste; stir till the smell is fragrant. Next, add in chopped tomatoes, lime peel, palm sugar, lime juice and soy sauce. Mix well. Turn down to low heat and stir slowly till the gravy thickens. Smother the fried fish with the gravy. Garnish with sliced cucumber. Serve with; white rice or nasi minyak.
